Dry and bright, oakiness appears to be dominant at first, leading later to balanced acidity for the just freshness. Persistent on the palate with grassy notes. This pleasure in a bottle finds its match with smoked salmon and grilled leeks, prawns and chorizo paella, risotto allo zafferano, splendid as aperitif.
WINEMAKING PROCESS
Handpicked in boxes, the grapes are then de-stemmed and softly pressed. The free run must is statically cold decanted for at least 24 hours. The must undergoes a slow fermentation in french and american barrels which lasts for about 21 days, then malolactic fermentation naturally occurs. Maturation continues in barrels for 12 months in order to obtain a fresh and delicate oaky dry wine. Rest in bottle for 4-5 months.
